Bring vegetable stock to the boil in a separate pot. Add the chilli, garlic, ginger and stir fry veg. Add the noodles and cook until everything is heated through. Add lime juice and a splash of soy sauce to taste and garnish with coriander.

Instructions to make Veggie Noddles Soup:
  1. Boil noodles then drain the water and keep it aside.
  2. Heat a pan and add 2 tablespoons white oil then add chopped onions and garlic fry to light golden brown.
  3. Then add chopped tomato, capsicum, carrots, potatoes and fry for few minutes.
  4. Fry Vegetables then add chopped green chilli, salt, turmeric powder and fry some few seconds then add 1 glass water and the boiled noodles.
  5. Then mix and add all vegetables and noddles.
  6. After that add ajinamoto and close the lid and keep in low flame for few seconds to cook properly.
  7. Then after few seconds switch off the flame and serve.Veggie noddles Soup with some black pepper powder.
