Drain the porcini, reserving the juice, then add to the onion with the mixed wild mushrooms. In a large saucepan, melt butter over medium heat. Pour in stock, a little at a time, stirring constantly. Heat a splash of olive oil in a large saucepan over a medium heat, add the onion, celery, garlic, parsley stalks, thyme leaves and mushrooms, pop the lid on and cook gently until softened.

- In a soup pot melt the butter over medium-high heat.
- Add the shallots (or onion) and garlic, add a healthy pinch of kosher salt and sweat until fragrant.
- Add mushrooms, thyme and another pinch of salt. Cook the mushrooms until they let off most of the liquid.
- Add the flour and stir until the ingredients look gummy, add wine to deglaze.
- After the wine has loosened the flour add the stock or broth, season to taste and stir to combine. Bring to a gentle boil then simmer for 20 to 45 minutes.
- Add cream taste for seasoning then serve and enjoy.

Melt the butter with the olive oil in a frying pan and fry the onion and garlic until soft. Add the mushroom and cook until soft, then season well with salt and freshly ground black pepper. After that transfer half the soup to a blender and whiz to a purée, then return it to the saucepan along with the lemon juice.
