The ingredients needed to make Mussel soup:
  1. Take 2 packets mushroom soup make with half water and half milk
  2. Get 2 tins mussels or oysters
  3. Make ready 30 ml Sherry
  4. Get 250 ml cream

Pour the white wine into a large saucepan. Add the celery leaves and bring to the boil. Once the mussels have opened, drain them, reserving their cooking liquid. Add the potatoes, stock, wine, reserved juices from the mussels, lemon juice, bay leaf, thyme and salt and pepper to taste.

Instructions to make Mussel soup:
  1. Mix mushroom soup (with half/half water and milk), mussels oyster and Sherry.
  2. Cook slowly till it is thickened. Add the cream and cook for 5 minutes.
  3. Enjoy

Once the mussels have opened, drain them, reserving their cooking liquid. Add the potatoes, stock, wine, reserved juices from the mussels, lemon juice, bay leaf, thyme and salt and pepper to taste. Bring to the boil, then reduce the heat to low. Add the cream, if you are using it. Bring to just a boil, then turn off the heat and season with lemon juice, salt and pepper.
