The ingredients needed to make Chicken Enchilada:
  1. Take 5 Tortilla sheets
  2. Make ready 1 Chicken breast
  3. Take 500 grams Chili con carne
  4. Prepare 1 can Canned tomato
  5. Make ready 1 it's spicy, so (to taste) Enchilada sauce (if you don't have any, salsa)
  6. Prepare 2 Soup stock cubes
  7. Get 4 tbsp Tomato puree
  8. Make ready 300 grams Easy melting cheese

Stir in salt, passata, water, chilli powder, green pepper and garlic. Heat the oil in a large frying pan and add the onions, peppers and half the garlic. Shred the cooked chicken and place in a large bowl. Mix in soured cream, grated cheese and spring onions.

Instructions to make Chicken Enchilada:
  1. Buy tortillas.
  2. Also buy enchilada sauce. If you can't find it, salsa also works.
  3. Boil chicken breast and cut into fine pieces. Chicken tenders are also okay.

  5. Put the chili con carne and the chicken in the tortilla and wrap it up neatly.
  6. Once wrapped, line them in a heat-resistant container.
  7. Put the canned tomatoes in a frying pan. Add the enchilada sauce (about 5 tablespoons worth), the soup stock cubes, tomato puree and mix well.
  8. Add half of the tomato sauce from Step 7 to the tortillas in Step 6. Top with plenty of easy-melting cheese.
  9. Put in the over and bake for 15 minutes at 480°F/250°C. Once the cheese has melted and has a nice golden brown color, it's finished.
  10. This can be served as-is.

Shred the cooked chicken and place in a large bowl. Mix in soured cream, grated cheese and spring onions. Season with cumin, coriander, salt and pepper. Place a heaped spoonful of the mixture in each tortilla wrap, roll up and place seam-side down in a baking dish. In a frying pan, fry the sliced chicken in the oil over a high heat for couple of minutes.
