When chicken is tender, remove from heat, let cool and shred. Spread the potatoes in the baking dish. Season the potatoes with the salt and additional black pepper. Spread the soup mixture over the chicken. Dice onion and place in a bowl with cottage cheese, sour cream, parmesan cheese, parsley, cayenne, salt and pepper.
