"Thuk" translates to "heart" so it is known as heart warming and comforting dish. Thukpa is a common Tibetan noodle soup which originated in East Tibet. Instructions to make Thukpa Vegetable Soup:
  1. Heat water, add salt, oil and noodles. Cook the noodles.
  2. Heat oil in a pan.  Once the oil is hot, add the chopped onion, ginger and garlic.
  3. Once the onion turns translucent, add the other chopped veggies (beans, carrots, cabbage, and green onions) and salt.
  4. Mix them well and cook for a couple of minutes. Add tomatoes. Cook for mint.
  5. Now add garam masala, sweet chilli sauce, soy sauce, pepper and mix well.
  6. Add the water. Let it simmer for 5 minutes. After 5 minutes, add the chopped coriander and mix well and simmer it again for 4 to 5 minutes.
  7. Finally, add the cooked noodles and cumin powder. Mix them well and let it simmer for 2 to 3 minutes.
