  13. Take 2 cloves garlic (minced)
  14. Make ready 1 Teaspoon Ginger (minced)
  15. Take 1 Teaspoon Miso paste
  16. Take 1 Teaspoon Olive oil

It's really cold here now from where I am so I am making some soup today out of anything I can find in my fridge. Add chicken broth, water, soybeans, soy sauce and, if desired, crushed red pepper to mushroom mixture. Add stock and prawns and bring to boiling. Squeeze half a lime into the soup.

Instructions to make Prawn and vegetable soup:
  1. In a large saucepan over medium heat, add oil & cook diced onion, until tender, add ginger, garlic and miso. Add water & stock.
  2. Chop all other vegetables to desired size, add to soup mix (reserve 2 Tablespoons of spring onion for a garnish at the end) add fish sauce & season to taste. Bring to the boil, reduce heat & simmer for 15 minutes, or until vegetables are soft. Add noodles to the soup & cook for a further 5-8 minutes, until cooked.
  3. Chop parsley, add to the soup. Serve in bowls. Garnish with chopped spring onion.
