When chicken seems done, insert an instant-read thermometer into the breast, then the thigh. Place chopped vegetables of your choice (carrots, onions, potatoes, etc.) in a roasting pan and then place the chicken on top so its juices can blend with the vegetables. Place chickens on a rack in a roasting pan, breast side up. Rub seasonings over outside and inside of chickens. Tuck under wings; tie together drumsticks.
