  5. Apply paste to both sides of the chicken then place cut side down over the onions. Cover tightly with foil and place in the oven for 40mins. basting every 20mins.
  6. Lower the temperature to 325° remove the foil and place under the broiler for 10mins. checking constantly until browned.

Place chicken on a cutting board. Season cavity with salt and pepper. Place lemon halves and herb stems in cavity. Rub mixture under and on skin of chicken. Place chicken, breast side up, in roasting pan.
