Add the cumin, nigella and coriander seeds and allow to splutter. Season with garlic powder, salt and chili powder. Chop your potatoes into wedges with the skins left on. Put the potatoes in a large saucepan.

- Microwave potatoes 2 at a time until done let cool then peel off skin
- In a soup pot add oil and onion cook until tender then add flour and butter cook on medium heat until just mixed
- Boil about 4 cups of water add bullion cubes until dissolved pour over onions and flour let simmer on low (if adding milk i would add it now)
- Add seasoning and potatoes , break up potatoes with spoon then add spinach mix well cover and simmer on low for about 10 minutes.
- Can be served as a side or the main dish..
- For extra spicy soup add 1 extra tsp red pepper flakes. .
