  1. Grind up dry stovetop stuffing into breadcrumbs. I use a magic bullet on pulse but you can use blender, food processor or smash in a bag.
  2. In a shallow dish scramble 2 raw eggs
  3. Put crushed stovetop stuffing in a large Ziploc bag
  4. Dip chicken in egg and add to crumbs in Ziploc bag, shake well (I do about three pieces at a time)
  5. Place breaded chicken on foil lined dish
  6. Add 2 small pieces of butter on each piece of chicken
  7. Bake at 375°F, time depends on size and thickness of chicken. Check to make sure they are cooked through. Let cool 5 min before removing from foil.

Toast the breadcrumbs in the oven for just a few minutes. PS Much MUCH easier than pan frying! One dredge batter - the usual process for crumbing is flour then egg then breadcrumbs. Dip chicken in flour first and then egg and finally in the crumb mix pressing the crumbs to adhere. Place on a pan sprayed with cooking spray.
